Plant Based Meal Plan 2/6/2017

When I meal plan, I usually just plan for dinners and pick up the basics for lunches and breakfasts.

For breakfasts, I make sure we have oatmeal, grits, and cold cereal.  We also make sure we have potatoes for those mornings when I’m feeling like cooking.  I also make sure there are plenty of fruits for smoothies.

For lunches, I make sure we have plenty of tortillas for burritos, rice, beans, and I like to make a batch of Hummus (hubby calls this white bean dip because he doesn’t like the name).

For Dinners, I make sure we have a variety of fresh and frozen vegetables to go along with our plans.

Without any delay and, unfortunately, without pictures at this time, Here is our list of dinners (in no particular order):


  1. Vegan BBQ Ribs, Potato Salad


  1. Black Bean Burgers, Baked Beans


  1. Carrot Dogs, Macaroni Salad


  1. Meatless Spaghetti, Garlic Bread


  1. Lentil Tacos


  1. Quinoa & Red Lentil Cutlets, Mashed Potatoes, Gravy, Veg.


  1. Vegan Homemade Hamburger Helper


I will post at least one or two recipes this week of how I made these.  Most are from recipes I just eye ball ingredients and some are from web recipes I adjusted to our families likes.
