Mary’s Mini Diet Day 5

The day started out with a bit of disappointment but I bounced back quickly. I gained 1 lb!  I know weight does that.  So, in order to not be disappointed again, I have decided not to post a weigh in until the end.

My blood sugar also went up a bit to 110.

I do love potatoes.  I really do.  But variety is a good thing to stop the boredom.  By the end of day 5, I found myself wanting rice.  To break the boredom, I may switch to rice at some point.  My husband isn’t fond of rice, and I don’t like making different meals, so I may or may not do this……only time will tell.

Breakfast was shredded hash browns and cantaloupe.

 

 

Mid morning snack was the rest of the cantaloupe.

Lunch was the vegetable soup left over from yesterday with a nice portion of homemade sauerkraut.

 

 

For dinner I made a potato broccoli soup.  I made this with 2 cups water, 5 potatoes peeled and chopped, and 1/2 bag of frozen broccoli in the pressure cooker for 10 minutes.  Then mashed it and added enough vegetable broth to get the consistency I wanted.  Add 1 TBL nutritional yeast, salt to taste, and top with the other 1/2 bag of broccoli (cooked).

 

 

Late at night, my stomach started making its hunger calls.  I didn’t feel that hungry so I ignored it.  A few minutes later I felt very hungry, so I had the remainder of the potato broccoli soup.
