Plant-Based Meal Plan 4/20/16

Sometimes life sends you unexpected curves.  We just learn to go with the flow.

My company didn’t make it last week due to a family emergency.  So many of the meals we planned for last week will be carried over to this week since I had bought a lot of supplies.  I will still be shopping this week because there is an amazing sale on the produce that we use often. 

Here is what they have on sale:

IGA 2 day sale=

Roma tomatoes $0.59 lb (roma tomatoes are very flavorful)

Cabbage $0.29 lb (I think another batch of homemade sauerkraut should be started)

Italian Squash $0.39 lb (great in stir fries or soups)

Celery 2/$1 (I am thinking of making a cream of celery soup for lunch one day)

Mushrooms $1.99 lb (we always stock mushrooms)

Potatoes $0.79 5lbs (Potatoes is something we buy every week)

On regular sale at IGA=

Green, Orange, and Red Bell Peppers 2/$1 (great for stir fries, salads, fajitas, and stuffed peppers)

Red Seedless Grapes $1.69 lb

The sales don’t affect what I had planned to make since we are cooking from the food we have on hand first, but they will give us a jump on what is for dinners next week.


  1. Bean Burritos – I will do an article soon on homemade refried beans from the beans I canned and lime cilantro rice.
  2. Lentil Tacos
  3. “Meatball” Subs – simple meal from frozen meatless meatballs, marinara, and tons of veggies on a hoagie roll.
  4. Stir Fry – Hoping to get a chance to try out an orange cauliflower recipe.
  5. Salad with “chicken” strips – frozen chicken-free strips that bake up crispy and go well with ranch.
  6. Pizza – store bought personal sized pizza crust with pizza sauce and tons of veggies. Everyone builds their own.
  7. Carrot Dogs and Eggless Potato Salad

I injured my back last Thursday, so we made the meal plan as simple as we can.
